Poached Halibut With Hollandaise Sauce

Ingredients

  • 2 halibut steaks
  • court bouillon or hot water
  • 1 slice carrot
  • 1 slice onion
  • 1 piece celery
  • 1 bay leaf
  • 4 cloves
  • 6 peppercorns
  • juice of ½ lemon
  • boiled potato balls
  • egg sauce or Hollandaise sauce

Method

  1. 1 Place halibut steaks in a shallow stew pan large enough to lie side by side.
  2. 2 Cover with court bouillon or hot water. Add carrot, onion, celery, bay leaf, cloves, peppercorns, and lemon juice.
  3. 3 Simmer until cooked through. Alternatively, steam in a covered baking pan in the oven.
  4. 4 Carefully lift fish out with a skimmer and knife to avoid breaking.
  5. 5 Arrange on a hot dish, slightly overlapping. Garnish with boiled potato balls.
  6. 6 Serve with egg sauce or Hollandaise sauce.
