Poached Halibut With Hollandaise Sauce
Ingredients
- 2 halibut steaks
- court bouillon or hot water
- 1 slice carrot
- 1 slice onion
- 1 piece celery
- 1 bay leaf
- 4 cloves
- 6 peppercorns
- juice of ½ lemon
- boiled potato balls
- egg sauce or Hollandaise sauce
Method
- 1 Place halibut steaks in a shallow stew pan large enough to lie side by side.
- 2 Cover with court bouillon or hot water. Add carrot, onion, celery, bay leaf, cloves, peppercorns, and lemon juice.
- 3 Simmer until cooked through. Alternatively, steam in a covered baking pan in the oven.
- 4 Carefully lift fish out with a skimmer and knife to avoid breaking.
- 5 Arrange on a hot dish, slightly overlapping. Garnish with boiled potato balls.
- 6 Serve with egg sauce or Hollandaise sauce.
