Poached Fish With Mushroom Catsup

Ingredients

  • fresh fish (such as shad, rock, or bass)
  • salt
  • egg sauce or drawn butter with parsley
  • pickled mushrooms and walnuts
  • mushroom catsup

Method

  1. 1 Clean the fish thoroughly, rub with salt, and wrap tightly in a towel.
  2. 2 Place the fish in a pot of boiling water. Keep the water boiling rapidly.
  3. 3 Cook for 15-20 minutes for small fish, or 30-45 minutes for large fish.
  4. 4 Remove fish to a serving dish and cover with egg sauce or drawn butter with parsley.
  5. 5 Serve with pickled mushrooms, walnuts, and mushroom catsup.
