Poached Fish With Mushroom Catsup
Ingredients
- fresh fish (such as shad, rock, or bass)
- salt
- egg sauce or drawn butter with parsley
- pickled mushrooms and walnuts
- mushroom catsup
Method
- 1 Clean the fish thoroughly, rub with salt, and wrap tightly in a towel.
- 2 Place the fish in a pot of boiling water. Keep the water boiling rapidly.
- 3 Cook for 15-20 minutes for small fish, or 30-45 minutes for large fish.
- 4 Remove fish to a serving dish and cover with egg sauce or drawn butter with parsley.
- 5 Serve with pickled mushrooms, walnuts, and mushroom catsup.
