Poached Fish Court Bouillon
Ingredients
- 5 pints water
- 1 small onion, sliced
- 1 clove
- 3 sprigs parsley
- 1 small red pepper
- 1/2 bay leaf
- 1 tsp paprika
- 1 tsp celery salt
- 2 tsp salt
- 1/2 cup vinegar
- 1 bouquet of soup herbs
Method
- 1 Place 5 pints of water in a fish kettle.
- 2 Add sliced onion, clove, parsley, red pepper, bay leaf, paprika, celery salt, salt, vinegar, and soup herbs.
- 3 Bring to a boil.
- 4 Add fish and cook.
- 5 Strain the liquid and set aside for reuse.
