Poached Fish Court Bouillon

Ingredients

  • 5 pints water
  • 1 small onion, sliced
  • 1 clove
  • 3 sprigs parsley
  • 1 small red pepper
  • 1/2 bay leaf
  • 1 tsp paprika
  • 1 tsp celery salt
  • 2 tsp salt
  • 1/2 cup vinegar
  • 1 bouquet of soup herbs

Method

  1. 1 Place 5 pints of water in a fish kettle.
  2. 2 Add sliced onion, clove, parsley, red pepper, bay leaf, paprika, celery salt, salt, vinegar, and soup herbs.
  3. 3 Bring to a boil.
  4. 4 Add fish and cook.
  5. 5 Strain the liquid and set aside for reuse.
