  • Water
  • Salt
  • Vinegar
  • Eggs

Method

  1. 1 Fill a deep saucepan with water and add a little salt and vinegar.
  2. 2 Bring the water to a violent boil.
  3. 3 Crack one egg close to the water and drop it quickly into the point of greatest ebullition.
  4. 4 Poach until firm enough to hold shape but before the yolk hardens.
  5. 5 Remove with a skimmer and place on an inverted tin to drain.
