Poached Eggs
Ingredients
- Water
- Salt
- Vinegar
- Eggs
Method
- 1 Fill a deep saucepan with water and add a little salt and vinegar.
- 2 Bring the water to a violent boil.
- 3 Crack one egg close to the water and drop it quickly into the point of greatest ebullition.
- 4 Poach until firm enough to hold shape but before the yolk hardens.
- 5 Remove with a skimmer and place on an inverted tin to drain.
