Poached Eggs With Savory Garnishes
Ingredients
- fresh eggs (laid a couple of days ago)
- water
- bread slices
- butter (optional)
- streaked bacon, broiled beef, broiled mutton, anchovies, pork sausages, or spinach (optional garnishes)
Method
- 1 Bring water to a boil in a tea-kettle.
- 2 Pour boiling water through a clean cloth into a stew-pan until half full.
- 3 Break an egg into a cup.
- 4 Remove the stew-pan from heat, gently slip the egg into the hot water.
- 5 Let stand until the white is set, then place over very moderate fire until water boils again.
- 6 Remove egg with a slice, trim ragged edges, and serve on toasted bread with optional garnishes.
