Poached Eggs With Savory Garnishes

Ingredients

  • fresh eggs (laid a couple of days ago)
  • water
  • bread slices
  • butter (optional)
  • streaked bacon, broiled beef, broiled mutton, anchovies, pork sausages, or spinach (optional garnishes)

Method

  1. 1 Bring water to a boil in a tea-kettle.
  2. 2 Pour boiling water through a clean cloth into a stew-pan until half full.
  3. 3 Break an egg into a cup.
  4. 4 Remove the stew-pan from heat, gently slip the egg into the hot water.
  5. 5 Let stand until the white is set, then place over very moderate fire until water boils again.
  6. 6 Remove egg with a slice, trim ragged edges, and serve on toasted bread with optional garnishes.
