Poached Eggs With Ham And Gherkin Sauce
Ingredients
- 2 eggs
- 2-3 slices boiled ham
- 1 gherkin, minced
- 1 small piece onion, minced
- 1 tsp fresh parsley, chopped
- Salt and pepper to taste
- Juice of ½ orange or lemon
Method
- 1 Mince the boiled ham, gherkin, onion, and parsley together. Season with salt and pepper.
- 2 Stew the ham mixture in a small pan over low heat for 15 minutes until heated through.
- 3 Poach the eggs in simmering water until set.
- 4 Place eggs in a dish, squeeze orange or lemon juice over them, and pour the hot ham sauce on top.
