Poached Eggs With Caramelized Onions And Verjuice

Ingredients

  • 2 eggs
  • 1 tbsp butter
  • 1 pinch salt
  • 1 onion, sliced into rounds
  • 2 tbsp sweet oil or butter
  • 2 tbsp verjuice
  • 1 pinch grated nutmeg

Method

  1. 1 Melt 1 tbsp butter in a skillet over low heat. Crack the eggs into the pan.
  2. 2 Season lightly with salt. Cover the pan and cook gently until the whites are set but yolks remain soft.
  3. 3 In a separate pan, fry the onion slices in sweet oil or butter until golden.
  4. 4 Stir in the verjuice, grated nutmeg, and a pinch of salt to create the sauce.
  5. 5 Pour the warm sauce over the eggs and serve immediately.
