Poached Eggs With Caramelized Onions And Verjuice
Ingredients
- 2 eggs
- 1 tbsp butter
- 1 pinch salt
- 1 onion, sliced into rounds
- 2 tbsp sweet oil or butter
- 2 tbsp verjuice
- 1 pinch grated nutmeg
Method
- 1 Melt 1 tbsp butter in a skillet over low heat. Crack the eggs into the pan.
- 2 Season lightly with salt. Cover the pan and cook gently until the whites are set but yolks remain soft.
- 3 In a separate pan, fry the onion slices in sweet oil or butter until golden.
- 4 Stir in the verjuice, grated nutmeg, and a pinch of salt to create the sauce.
- 5 Pour the warm sauce over the eggs and serve immediately.
