  • toasted bread
  • clear mutton broth, green pease broth, or other clear seasoned pottage
  • butter
  • salt
  • chopped parsley
  • poached eggs
  • optional: fried or stewed fish (carps, milts, gudgeons, smelts, oysters)
  • optional: fried and stewed capers, mushrooms
  • optional: currants, boiled or stewed prunes
  • optional: whole cloves, nutmeg, mace, ginger
  • optional: white wine, verjuice, or green sauce
  • optional: grated nutmeg
  • optional: carved lemon

Method

  1. 1 Lay slices of cheese between two pieces of toasted bread.
