Poached Egg Cheese Toast With Broth
Ingredients
- slices of cheese
- toasted bread
- clear mutton broth, green pease broth, or other clear seasoned pottage
- butter
- salt
- chopped parsley
- poached eggs
- optional: fried or stewed fish (carps, milts, gudgeons, smelts, oysters)
- optional: fried and stewed capers, mushrooms
- optional: currants, boiled or stewed prunes
- optional: whole cloves, nutmeg, mace, ginger
- optional: white wine, verjuice, or green sauce
- optional: grated nutmeg
- optional: carved lemon
Method
- 1 Lay slices of cheese between two pieces of toasted bread.
- 2 Pour clear, seasoned broth (mutton, pease, or other) over the cheese and bread.
- 3 Top with chopped parsley and poached eggs.
- 4 Optional: Garnish with fried fish, capers, mushrooms, dried fruits, spices, wine, or lemon as desired.
