Poached Cod With Herb Cream Sauce
Ingredients
- 1 lb cod, hake, whiting, or red mullet
- 2 onions, sliced
- 1 turnip, sliced
- 1 mushroom, sliced
- 2 cloves
- 1 cup milk
- 1 cup cream
- 1 egg yolk
- 1/8 tsp salt
- 1 tbsp chopped parsley
- 1 tbsp chopped marjoram
- 1 tbsp chopped mint
- 1 tbsp chopped chervil
Method
- 1 In a stewpan, combine 1 cup milk, 2 onions, 1 turnip, 1 mushroom, 2 cloves, salt, and chopped herbs. Simmer for 30 minutes.
- 2 Strain the infused milk through a fine sieve, pressing on solids to extract flavor. Discard solids.
- 3 Return the strained milk to the pan and add the cream. Bring to a gentle simmer over low heat.
- 4 Add the fish to the warm milk and cream mixture. Poach gently until the fish is cooked through.
- 5 Remove the fish and keep warm. Reduce the remaining sauce slightly in a bain-marie or low heat, stirring constantly to prevent curdling.
- 6 Whisk the egg yolk into the hot sauce to thicken. Pour the sauce over the fish and serve immediately.
