Poached Cod In Herb Milk Sauce
Ingredients
- 1 lb cod or whiting fillets
- 2 onions, sliced
- 1 turnip, sliced
- 1 cup milk
- 2 tbsp heavy cream
- 1 pinch chopped parsley
- 1 pinch chopped chervil
- 1 pinch chopped marjoram
- 4 whole cloves
- Salt to taste
Method
- 1 In a large pot, combine 2 cups salted water, onions, turnip, parsley, chervil, marjoram, and cloves. Boil gently for 30 minutes.
- 2 Remove the pot from heat and strain the liquid through a sieve, discarding the vegetables and cloves.
- 3 Return the strained liquid to the pot and add an equal amount of milk and a little cream. Bring to a gentle simmer.
- 4 Add the fish to the hot milk mixture and cook until flaky. Serve the fish with the sauce poured over it.
