Poached Cod In Herb Milk Sauce

Ingredients

  • 1 lb cod or whiting fillets
  • 2 onions, sliced
  • 1 turnip, sliced
  • 1 cup milk
  • 2 tbsp heavy cream
  • 1 pinch chopped parsley
  • 1 pinch chopped chervil
  • 1 pinch chopped marjoram
  • 4 whole cloves
  • Salt to taste

Method

  1. 1 In a large pot, combine 2 cups salted water, onions, turnip, parsley, chervil, marjoram, and cloves. Boil gently for 30 minutes.
  2. 2 Remove the pot from heat and strain the liquid through a sieve, discarding the vegetables and cloves.
  3. 3 Return the strained liquid to the pot and add an equal amount of milk and a little cream. Bring to a gentle simmer.
  4. 4 Add the fish to the hot milk mixture and cook until flaky. Serve the fish with the sauce poured over it.
