Poached Apples With Marmalade Center

Ingredients

  • 4 large pippin apples
  • 1 lb loaf sugar
  • 1/2 cup water
  • 1 egg white
  • Juice of 1-2 lemons or 12 drops lemon essence
  • Small sweetmeats or marmalade (optional)

Method

  1. 1 Pare and core the apples, leaving them whole.
  2. 2 Boil sugar and water, skimming until clear. Beat in the egg white.
  3. 3 Add lemon juice or essence to the syrup.
  4. 4 Boil apples in the syrup until soft and tender.
  5. 5 Remove apples and place in a deep dish.
  6. 6 Fill the cored holes with sweetmeats or marmalade.
  7. 7 Boil the remaining syrup until it jellies.
  8. 8 Pour hot syrup over apples and chill until set.
