Poached Apples With Marmalade Center
Ingredients
- 4 large pippin apples
- 1 lb loaf sugar
- 1/2 cup water
- 1 egg white
- Juice of 1-2 lemons or 12 drops lemon essence
- Small sweetmeats or marmalade (optional)
Method
- 1 Pare and core the apples, leaving them whole.
- 2 Boil sugar and water, skimming until clear. Beat in the egg white.
- 3 Add lemon juice or essence to the syrup.
- 4 Boil apples in the syrup until soft and tender.
- 5 Remove apples and place in a deep dish.
- 6 Fill the cored holes with sweetmeats or marmalade.
- 7 Boil the remaining syrup until it jellies.
- 8 Pour hot syrup over apples and chill until set.
