Poached Apples With Fruit Jelly Filling
Ingredients
- 1 lb tart cooking apples
- Juice of 2 lemons
- Rind of 1 lemon
- Water (for poaching)
- ½ lb sugar
- Fruit jelly (optional, for filling)
- Whipped or plain cream (for serving)
Method
- 1 Peel apples and place in a saucepan with lemon juice and rind. Cover with water and simmer slowly until tender when pierced with a straw.
- 2 Remove apples with a slotted spoon. In the same liquid, dissolve sugar over heat until the syrup boils.
- 3 Return apples to the syrup and cook until they become translucent and clear.
- 4 Remove apples, core them, and fill with fruit jelly if desired. Boil the remaining syrup until thickened.
- 5 Serve the apples very cold, drizzled with the reduced syrup and accompanied by whipped or plain cream.
