Poached Apples With Clarified Lemon Syrup
Ingredients
- Golden rennet apples (enough to fill serving dish)
- ½ cup water
- 1 lemon (juice and peel)
- 1 egg white (beaten)
Method
- 1 Peel apples and remove cores from the bottom, leaving them whole at the top.
- 2 Simmer apple cores and water to make a syrup base.
- 3 Add apples to the syrup and stew gently until tender, avoiding breaking them.
- 4 Clarify the syrup by stirring in beaten egg white, then skimming off the foam.
- 5 Add lemon juice and shredded peel, boil for one minute, then pour over apples.
