Plum And Lemon Bread Pudding
Ingredients
- 1 loaf (2 lb) bread, cut into 4 pieces
- 2 quarts milk
- 2 oz butter
- 4 oz sugar
- 4 oz plums or currants
- 3 eggs, beaten
- 1 strip lemon peel, chopped
- 1 tsp salt
Method
- 1 Soak bread pieces in boiling water for 20 minutes, then squeeze out excess water.
- 2 Combine bread, milk, butter, sugar, lemon peel, and salt in a saucepan.
- 3 Stir over heat until the mixture boils.
- 4 Remove from heat and stir in beaten eggs and plums or currants.
- 5 Pour into a greased baking dish and bake for 1 hour 15 minutes.
