Plum And Lemon Bread Pudding

Ingredients

  • 1 loaf (2 lb) bread, cut into 4 pieces
  • 2 quarts milk
  • 2 oz butter
  • 4 oz sugar
  • 4 oz plums or currants
  • 3 eggs, beaten
  • 1 strip lemon peel, chopped
  • 1 tsp salt

Method

  1. 1 Soak bread pieces in boiling water for 20 minutes, then squeeze out excess water.
  2. 2 Combine bread, milk, butter, sugar, lemon peel, and salt in a saucepan.
  3. 3 Stir over heat until the mixture boils.
  4. 4 Remove from heat and stir in beaten eggs and plums or currants.
  5. 5 Pour into a greased baking dish and bake for 1 hour 15 minutes.
