Plantain Cups With Spiced Chicken
Ingredients
- 1 cup cooked diced chicken, drained
- 1/3 cup chopped onion
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 large green plantains
- 2 tablespoons olive oil
- 1/4 teaspoon salt
Method
- 1 Heat 1 tablespoon oil in a skillet over medium heat. Add chicken and onions, cooking for 1-2 minutes.
- 2 Add cumin, garlic powder, pepper, and salt. Cook, stirring often, for 5 minutes. Set aside.
- 3 Peel plantains, cut into 1-inch chunks. Heat 2 tablespoons oil in a skillet.
- 4 Cook plantain chunks with salt, turning often, until golden and tender, about 5-6 minutes per side.
- 5 Shape warm plantain chunks into cups using hands or a mold. Fill with chicken mixture and serve.
