Plantain Cups With Spiced Chicken

Ingredients

  • 1 cup cooked diced chicken, drained
  • 1/3 cup chopped onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 large green plantains
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt

Method

  1. 1 Heat 1 tablespoon oil in a skillet over medium heat. Add chicken and onions, cooking for 1-2 minutes.
  2. 2 Add cumin, garlic powder, pepper, and salt. Cook, stirring often, for 5 minutes. Set aside.
  3. 3 Peel plantains, cut into 1-inch chunks. Heat 2 tablespoons oil in a skillet.
  4. 4 Cook plantain chunks with salt, turning often, until golden and tender, about 5-6 minutes per side.
