Planked Whitefish With Potato Border

Ingredients

  • 1 large whitefish, cleaned and split
  • Butter, for rubbing and coating plank
  • Salt and pepper
  • Mashed potato
  • 1 egg white, beaten
  • Lemon wedges
  • Fresh parsley

Method

  1. 1 Butter a fish plank and tack the split whitefish skin-side down onto it.
  2. 2 Rub the fish with butter and season generously with salt and pepper.
  3. 3 Cook in a moderate oven (350°F) or under a broiler until the fish is done.
  4. 4 Mix mashed potato with beaten egg white and pipe a border around the fish using a pastry bag.
  5. 5 Brown the potato border in the oven for a few minutes, then serve with lemon and parsley.
