Plank Grilled Shad With Lemon

Ingredients

  • 1 shad (split by fish dealer)
  • 1 wooden plank
  • Cold water (for soaking and basting)
  • Lemon juice

Method

  1. 1 Soak the wooden plank in cold water for two hours.
  2. 2 Place the split shad on the soaked plank and brush with lemon juice.
  3. 3 Place the plank in the lowest part of a gas broiler.
  4. 4 Baste the fish with cold water after it has been in the oven for twelve minutes.
  5. 5 Cook for a total of thirty minutes for a two-and-a-half-pound shad.
