Plank Grilled Shad With Lemon
Ingredients
- 1 shad (split by fish dealer)
- 1 wooden plank
- Cold water (for soaking and basting)
- Lemon juice
Method
- 1 Soak the wooden plank in cold water for two hours.
- 2 Place the split shad on the soaked plank and brush with lemon juice.
- 3 Place the plank in the lowest part of a gas broiler.
- 4 Baste the fish with cold water after it has been in the oven for twelve minutes.
- 5 Cook for a total of thirty minutes for a two-and-a-half-pound shad.
