Plank Grilled Shad With Butter
Ingredients
- 1 whole shad, cleaned and split
- Salt and pepper
- Butter
Method
- 1 Season a 2 ft by 1.5 ft hickory plank. Clean the shad, split it open, and tack it skin-side down to the plank with four tacks.
- 2 Dredge the fish with salt and pepper. Place the plank before the fire with the large end down.
- 3 Cook until done, changing position to put the small end down. Spread with butter and serve immediately.
