Pistachio Stuffed Veal Rolls

Ingredients

  • veal steak, sliced thin
  • butter
  • bread crumbs
  • 1 whole egg
  • salt
  • pistachio nuts, chopped
  • herbs
  • parsley, chopped
  • 2 tsp flour

Method

  1. 1 Spread thin slices of veal in a buttered stewpan.
  2. 2 Mix bread crumbs, egg, salt, pistachios, herbs, parsley, and butter to make a filling.
  3. 3 Place a spoonful of filling on each veal slice and roll them up tightly.
  4. 4 Cover with buttered paper and lid; cook in 2 oz butter over low heat for 45 minutes.
  5. 5 Thicken the pan juices with a roux of flour and butter fried together.
