Pistachio Stuffed Veal Rolls
Ingredients
- veal steak, sliced thin
- butter
- bread crumbs
- 1 whole egg
- salt
- pistachio nuts, chopped
- herbs
- parsley, chopped
- 2 tsp flour
Method
- 1 Spread thin slices of veal in a buttered stewpan.
- 2 Mix bread crumbs, egg, salt, pistachios, herbs, parsley, and butter to make a filling.
- 3 Place a spoonful of filling on each veal slice and roll them up tightly.
- 4 Cover with buttered paper and lid; cook in 2 oz butter over low heat for 45 minutes.
- 5 Thicken the pan juices with a roux of flour and butter fried together.
