Pistachio Ice Cream

Ingredients

  • pistachio nuts
  • cream
  • sugar
  • flavoring
  • green coloring matter (or chopped spinach/parsley and alcohol)

Method

  1. 1 Blanch, pound, or grate the pistachio nuts.
  2. 2 Combine half the cream and all the sugar in a double boiler.
  3. 3 Stir until the sugar is dissolved, then set aside to cool.
  4. 4 Once cold, add the nuts, flavoring, remaining cream, and coloring.
  5. 5 Mix well and turn into the freezer to freeze.
