Pippin Apple Jelly With Orange And Lemon
Ingredients
- 1 lb Pippin apples, peeled, quartered
- Water to cover apples
- 1 lb sugar
- 1 pint apple juice (strained)
- Orange peels, cut into long threads
- 1 lemon, pared and sliced very thin
Method
- 1 Boil apples in water until soft and flavor is extracted. Strain the liquid.
- 2 Boil orange peels in two or three changes of water to remove bitterness.
- 3 Add sugar and blanched orange peels to 1 pint of apple juice. Boil.
- 4 Add thin lemon slices and boil briefly. Remove peels and slices.
- 5 Pour hot jelly over the reserved lemon slices in glasses. Let set.
