Pippin Apple Jelly With Orange And Lemon

Ingredients

  • 1 lb Pippin apples, peeled, quartered
  • Water to cover apples
  • 1 lb sugar
  • 1 pint apple juice (strained)
  • Orange peels, cut into long threads
  • 1 lemon, pared and sliced very thin

Method

  1. 1 Boil apples in water until soft and flavor is extracted. Strain the liquid.
  2. 2 Boil orange peels in two or three changes of water to remove bitterness.
  3. 3 Add sugar and blanched orange peels to 1 pint of apple juice. Boil.
  4. 4 Add thin lemon slices and boil briefly. Remove peels and slices.
  5. 5 Pour hot jelly over the reserved lemon slices in glasses. Let set.
