Pineapple Vegetable Salad With Yogurt Dressing
Ingredients
- 1 cup salad greens
- 1 cup chopped vegetables (tomatoes, cucumbers, carrots, green beans)
- 1 cup pineapple chunks, drained
- 1 1/2 teaspoons white vinegar
- 1/16 cup orange juice
- 1/4 cup non-fat fruit-flavored yogurt
- 2 tablespoons chopped nuts
- 2 tablespoons raisins
Method
- 1 Wash hands and place salad greens on a large platter or in a salad bowl.
- 2 In a small bowl, mix white vinegar, orange juice, and yogurt to create the dressing.
- 3 In a large bowl, combine chopped vegetables and pineapple chunks.
- 4 Add the dressing to the vegetable mixture and stir to coat evenly.
- 5 Spoon the mixture over the salad greens and top with chopped nuts and raisins.
- 6 Serve immediately.
