Pineapple Vegetable Salad With Yogurt Dressing

  • 1 cup salad greens
  • 1 cup chopped vegetables (tomatoes, cucumbers, carrots, green beans)
  • 1 cup pineapple chunks, drained
  • 1 1/2 teaspoons white vinegar
  • 1/16 cup orange juice
  • 1/4 cup non-fat fruit-flavored yogurt
  • 2 tablespoons chopped nuts
  • 2 tablespoons raisins

Method

  1. 1 Wash hands and place salad greens on a large platter or in a salad bowl.
  2. 2 In a small bowl, mix white vinegar, orange juice, and yogurt to create the dressing.
  3. 3 In a large bowl, combine chopped vegetables and pineapple chunks.
  4. 4 Add the dressing to the vegetable mixture and stir to coat evenly.
  5. 5 Spoon the mixture over the salad greens and top with chopped nuts and raisins.
