Pineapple Tapioca Soufflé

Ingredients

  • 1 cup grated pineapple
  • 1/3 cup fine tapioca
  • 2/3 cup sugar
  • 1/2 tsp salt
  • 1 lemon, juiced
  • 2 egg whites
  • Cream and sugar for serving

Method

  1. 1 Heat the grated pineapple in a double boiler or over hot water.
  2. 2 Sprinkle in the tapioca, sugar, and salt. Cook until the tapioca becomes transparent.
  3. 3 Remove from heat and stir in the lemon juice.
  4. 4 Gently fold in the egg whites, which have been beaten until stiff and dry.
  5. 5 Serve immediately with cream and sugar.
