Pineapple Tapioca Soufflé
Ingredients
- 1 cup grated pineapple
- 1/3 cup fine tapioca
- 2/3 cup sugar
- 1/2 tsp salt
- 1 lemon, juiced
- 2 egg whites
- Cream and sugar for serving
Method
- 1 Heat the grated pineapple in a double boiler or over hot water.
- 2 Sprinkle in the tapioca, sugar, and salt. Cook until the tapioca becomes transparent.
- 3 Remove from heat and stir in the lemon juice.
- 4 Gently fold in the egg whites, which have been beaten until stiff and dry.
- 5 Serve immediately with cream and sugar.
