Pineapple Meringue Pudding

Ingredients

  • 1 large or 1 small pineapple, grated
  • 2 oz butter
  • 3 oz granulated sugar
  • 1.5 oz grated bread crumbs
  • 3 egg yolks
  • 4 egg whites
  • ¾ cup granulated sugar
  • few drops almond extract

Method

  1. 1 Grate the pineapple.
  2. 2 Cream 2 oz butter and 3 oz sugar; mix in 3 egg yolks, grated pineapple, and 1.5 oz bread crumbs.
  3. 3 Turn mixture into a pudding dish and bake at 350°F for 20 minutes.
  4. 4 Beat 3 egg whites to stiff peaks; gradually add ¾ cup sugar and almond extract.
  5. 5 Spread meringue over the hot pudding, place dish in a pan of warm water, and bake 10-15 minutes until golden.
  6. 6 Serve cold.
