Pineapple Meringue Pudding
Ingredients
- 1 large or 1 small pineapple, grated
- 2 oz butter
- 3 oz granulated sugar
- 1.5 oz grated bread crumbs
- 3 egg yolks
- 4 egg whites
- ¾ cup granulated sugar
- few drops almond extract
Method
- 1 Grate the pineapple.
- 2 Cream 2 oz butter and 3 oz sugar; mix in 3 egg yolks, grated pineapple, and 1.5 oz bread crumbs.
- 3 Turn mixture into a pudding dish and bake at 350°F for 20 minutes.
- 4 Beat 3 egg whites to stiff peaks; gradually add ¾ cup sugar and almond extract.
- 5 Spread meringue over the hot pudding, place dish in a pan of warm water, and bake 10-15 minutes until golden.
- 6 Serve cold.
