Pineapple Ice Cream
Ingredients
- 1 cup heavy cream
- ½ cup sugar
- 1 pineapple, peeled and grated
- 1 cup heavy cream
- lemon juice
Method
- 1 Combine half the cream and half the sugar in a double boiler over heat. Stir until sugar dissolves, then remove from heat and let cool completely.
- 2 Peel and grate the pineapple. Mix in the remaining half of the sugar and set aside.
- 3 Once the cream mixture is cold, add the remaining cup of cream. Begin freezing in an ice cream maker until partly frozen.
- 4 Add lemon juice to the grated pineapple, then mix into the partly frozen cream. Freeze for five more minutes, then repack to harden.
