Pineapple Chicken
Ingredients
- 1 teaspoon oil or margarine
- 2 1/2 pounds boneless skinless chicken
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 can (6 ounces) pineapple juice, frozen concentrate
- 2 fluid ounces water
Method
- 1 Defrost the pineapple juice concentrate.
- 2 Grease a large frying pan and heat over low heat with oil or margarine.
- 3 Add chicken to the pan, sprinkling with salt and pepper.
- 4 Cook until chicken begins to brown.
- 5 Add the defrosted pineapple juice and water to the pan.
- 6 Cover and cook slowly, turning occasionally, for 50 minutes or until fork tender.
- 7 Transfer chicken to a warm platter.
- 8 Skim fat from pan juices, then boil down until slightly thickened.
- 9 Return chicken to the pan and reheat for a few minutes.
