Pineapple Chicken

Ingredients

  • 1 teaspoon oil or margarine
  • 2 1/2 pounds boneless skinless chicken
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can (6 ounces) pineapple juice, frozen concentrate
  • 2 fluid ounces water

Method

  1. 1 Defrost the pineapple juice concentrate.
  2. 2 Grease a large frying pan and heat over low heat with oil or margarine.
  3. 3 Add chicken to the pan, sprinkling with salt and pepper.
  4. 4 Cook until chicken begins to brown.
  5. 5 Add the defrosted pineapple juice and water to the pan.
  6. 6 Cover and cook slowly, turning occasionally, for 50 minutes or until fork tender.
  7. 7 Transfer chicken to a warm platter.
  8. 8 Skim fat from pan juices, then boil down until slightly thickened.
  9. 9 Return chicken to the pan and reheat for a few minutes.
