Pineapple Avocado Chicken Pita Salad

Ingredients

  • 2 avocados, divided
  • 1 tablespoon non-fat plain Greek yogurt
  • 1/4 teaspoon rice vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup fresh pineapple chunks
  • 1/2 cup chopped red bell pepper
  • 1/2 cup shredded carrots
  • 1/2 cup shredded cabbage
  • 2 sliced green onions
  • 2 cups cooked cubed chicken breast
  • 4 whole wheat pita pockets

Method

  1. 1 Mash 1/2 avocado in a small bowl; stir in yogurt, rice vinegar, salt, and pepper to create the dressing.
  2. 2 Cut the remaining avocado into small chunks. In a large bowl, combine the avocado, pineapple, bell pepper, carrots, cabbage, green onions, and chicken.
  3. 3 Pour the dressing over the mixture and toss gently to coat evenly.
  4. 4 Spoon the salad into pita pockets and serve immediately.
