Pineapple Avocado Chicken Pita Salad
Ingredients
- 2 avocados, divided
- 1 tablespoon non-fat plain Greek yogurt
- 1/4 teaspoon rice vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup fresh pineapple chunks
- 1/2 cup chopped red bell pepper
- 1/2 cup shredded carrots
- 1/2 cup shredded cabbage
- 2 sliced green onions
- 2 cups cooked cubed chicken breast
- 4 whole wheat pita pockets
Method
- 1 Mash 1/2 avocado in a small bowl; stir in yogurt, rice vinegar, salt, and pepper to create the dressing.
- 2 Cut the remaining avocado into small chunks. In a large bowl, combine the avocado, pineapple, bell pepper, carrots, cabbage, green onions, and chicken.
- 3 Pour the dressing over the mixture and toss gently to coat evenly.
- 4 Spoon the salad into pita pockets and serve immediately.
