Pineapple And Vegetable Salad With Yogurt Dressing
Ingredients
- 2 cups salad greens
- 1 cup chopped vegetables (tomatoes, cucumbers, carrots, green beans)
- 1 cup pineapple chunks, drained
- 1/4 cup non-fat fruit-flavored yogurt
- 2 tablespoons chopped nuts
- 2 tablespoons raisins or dried cranberries
- 1 1/2 teaspoons white vinegar
- 1 tablespoon orange juice
Method
- 1 Place salad greens on a large platter or in a salad bowl.
- 2 In a separate bowl, mix chopped vegetables and pineapple chunks. Add yogurt, vinegar, and orange juice; stir to combine.
- 3 Spoon the dressed vegetable mixture over the salad greens.
- 4 Top with chopped nuts and raisins. Serve immediately.
