Pineapple And Celery Mayo Salad
Ingredients
- equal parts celery, shredded
- equal parts pineapple, peeled and shredded
- mayonnaise dressing
- celery leaves for garnish
Method
- 1 Select tender celery heads and a ripe pineapple. Pare the pineapple, removing the eyes carefully.
- 2 Shred the pineapple with a fork and cut into small pieces. Cut the celery fine.
- 3 Place the celery and pineapple on ice separately until very cold.
- 4 Mix the cold celery and pineapple together and place on a salad dish.
- 5 Cover with mayonnaise dressing, garnish with celery leaves, and serve immediately.
