Pineapple And Celery Mayo Salad

Ingredients

  • equal parts celery, shredded
  • equal parts pineapple, peeled and shredded
  • mayonnaise dressing
  • celery leaves for garnish

Method

  1. 1 Select tender celery heads and a ripe pineapple. Pare the pineapple, removing the eyes carefully.
  2. 2 Shred the pineapple with a fork and cut into small pieces. Cut the celery fine.
  3. 3 Place the celery and pineapple on ice separately until very cold.
  4. 4 Mix the cold celery and pineapple together and place on a salad dish.
  5. 5 Cover with mayonnaise dressing, garnish with celery leaves, and serve immediately.
