Pimiento Pepper Jam
Ingredients
- 1 small can pimientos
- ¾ cup sugar
- ½ cup vinegar
- melted paraffin
- 3 sweet red peppers (optional substitute)
Method
- 1 Drain pimientos and force through a food chopper.
- 2 Combine pimientos, sugar, and vinegar in a saucepan.
- 3 Stir until sugar dissolves, then boil gently to 220°F or jam consistency.
- 4 Pour into sterilized glasses and cover with melted paraffin when cool.
