Pimiento Pepper Jam

Ingredients

  • 1 small can pimientos
  • ¾ cup sugar
  • ½ cup vinegar
  • melted paraffin
  • 3 sweet red peppers (optional substitute)

Method

  1. 1 Drain pimientos and force through a food chopper.
  2. 2 Combine pimientos, sugar, and vinegar in a saucepan.
  3. 3 Stir until sugar dissolves, then boil gently to 220°F or jam consistency.
  4. 4 Pour into sterilized glasses and cover with melted paraffin when cool.
