Pimento Cheese Rye Sandwiches

Ingredients

  • 1 (14 oz) can pimentos, chopped
  • 2 stalks celery, chopped
  • 8 stalks parsley, chopped
  • 2 onions, chopped
  • 1 cup cottage cheese
  • ½ cup mayonnaise
  • 1 tsp salt
  • 1 tsp paprika
  • 4 oz butter, softened
  • 2 tbsp mayonnaise
  • 1 tsp paprika
  • ½ tsp mustard
  • 1 loaf rye bread

Method

  1. 1 Chop pimentos, celery, parsley, and onions together using a food chopper or knife.
  2. 2 In a mixing bowl, combine the chopped vegetables with cottage cheese, ½ cup mayonnaise, salt, and 1 tsp paprika. Mix well.
  3. 3 In a separate bowl, beat butter, 2 tbsp mayonnaise, 1 tsp paprika, and mustard until creamy.
  4. 4 Spread the butter mixture on slices of rye bread. Top with the pimento mixture and cover with another slice of bread.
  5. 5 Cut sandwiches into thin triangles and serve.
