Pimento Cheese Rye Sandwiches
Ingredients
- 1 (14 oz) can pimentos, chopped
- 2 stalks celery, chopped
- 8 stalks parsley, chopped
- 2 onions, chopped
- 1 cup cottage cheese
- ½ cup mayonnaise
- 1 tsp salt
- 1 tsp paprika
- 4 oz butter, softened
- 2 tbsp mayonnaise
- 1 tsp paprika
- ½ tsp mustard
- 1 loaf rye bread
Method
- 1 Chop pimentos, celery, parsley, and onions together using a food chopper or knife.
- 2 In a mixing bowl, combine the chopped vegetables with cottage cheese, ½ cup mayonnaise, salt, and 1 tsp paprika. Mix well.
- 3 In a separate bowl, beat butter, 2 tbsp mayonnaise, 1 tsp paprika, and mustard until creamy.
- 4 Spread the butter mixture on slices of rye bread. Top with the pimento mixture and cover with another slice of bread.
- 5 Cut sandwiches into thin triangles and serve.
