Pickled White Mushrooms
Ingredients
- 1 lb white mushrooms
- Salt and water for washing
- White wine vinegar
- Spices of choice (e.g., mace)
- Alum (optional, for firmness)
Method
- 1 Wash mushrooms clean using a flannel and salt water.
- 2 Boil mushrooms in salted water for one minute.
- 3 Remove mushrooms and dry them between two flannels until cool.
- 4 Prepare a brine by boiling white wine vinegar with spices and alum, then let it cool completely.
- 5 Pack mushrooms into a jar and cover with the cooled vinegar mixture. Seal tightly.
