Pickled White Mushrooms

Ingredients

  • 1 lb white mushrooms
  • Salt and water for washing
  • White wine vinegar
  • Spices of choice (e.g., mace)
  • Alum (optional, for firmness)

Method

  1. 1 Wash mushrooms clean using a flannel and salt water.
  2. 2 Boil mushrooms in salted water for one minute.
  3. 3 Remove mushrooms and dry them between two flannels until cool.
  4. 4 Prepare a brine by boiling white wine vinegar with spices and alum, then let it cool completely.
  5. 5 Pack mushrooms into a jar and cover with the cooled vinegar mixture. Seal tightly.
