Pickled Samphire
Ingredients
- 1 bunch samphire
- 1 cup white or bay salt
- Water
- Strong wine vinegar
Method
- 1 Remove dead leaves from the samphire branches.
- 2 Make a strong brine by boiling salt in water, skimming the scum, and letting it cool.
- 3 Place samphire in a jar, cover with the cold brine, and store for preservation.
- 4 To serve, boil the preserved samphire in fresh water until green, then cool.
- 5 Transfer to a jar, cover with strong wine vinegar, seal tightly, and store.
