Pickled Samphire

Ingredients

  • 1 bunch samphire
  • 1 cup white or bay salt
  • Water
  • Strong wine vinegar

Method

  1. 1 Remove dead leaves from the samphire branches.
  2. 2 Make a strong brine by boiling salt in water, skimming the scum, and letting it cool.
  3. 3 Place samphire in a jar, cover with the cold brine, and store for preservation.
  4. 4 To serve, boil the preserved samphire in fresh water until green, then cool.
  5. 5 Transfer to a jar, cover with strong wine vinegar, seal tightly, and store.
