Pickled Oysters With Peppers And Mace
Ingredients
- Oysters in their own liquor
- Water
- Vinegar
- Whole peppers
- Mace
- Salt
Method
- 1 Scald oysters in their liquor with a little water until plump. Remove and rinse in cold water.
- 2 Place rinsed oysters into glass jars.
- 3 Scald an equal amount of the oyster liquor and vinegar with whole peppers, mace, and salt. Let cool completely.
- 4 Pour the cold brine over the oysters in the jars. Seal and store for two to three weeks.
