Pickled Oysters With Peppers And Mace

Ingredients

  • Oysters in their own liquor
  • Water
  • Vinegar
  • Whole peppers
  • Mace
  • Salt

Method

  1. 1 Scald oysters in their liquor with a little water until plump. Remove and rinse in cold water.
  2. 2 Place rinsed oysters into glass jars.
  3. 3 Scald an equal amount of the oyster liquor and vinegar with whole peppers, mace, and salt. Let cool completely.
  4. 4 Pour the cold brine over the oysters in the jars. Seal and store for two to three weeks.
