Method

  1. 1 Peel the smallest onions and place them in a strong salt water solution.
  2. 2 Change the brine daily for six days to draw out bitterness.
  3. 3 Briefly boil the onions, then skim them well.
  4. 4 Prepare a pickle brine similar to one used for cucumbers, adding mustard seed.
  5. 5 Combine the cooled onions with the cooled pickle brine.
  6. 6 Store in an airtight container to prevent spoilage.
