Pickled Cabbage And Onions

Ingredients

  • 1 head green cabbage, shredded
  • 1 tablespoon salt
  • 12 raw onions, sliced
  • Whole cloves
  • ¾ cup mustard seed
  • Whole black pepper
  • 6 half-ripe red pepper pods, cut
  • Vinegar, enough to cover

Method

  1. 1 Shred the cabbage finely and sprinkle with salt. Let it sit under moderate pressure for 12 hours to draw out moisture.
  2. 2 Drain the cabbage thoroughly through a colander. Slice the onions.
  3. 3 Layer the cabbage and onions in a large jar. Add cloves, mustard seed, pepper, and cut red pepper pods between layers.
  4. 4 Boil the vinegar and pour it over the mixture until everything is completely covered.
