Pickled Cabbage And Onions
Ingredients
- 1 head green cabbage, shredded
- 1 tablespoon salt
- 12 raw onions, sliced
- Whole cloves
- ¾ cup mustard seed
- Whole black pepper
- 6 half-ripe red pepper pods, cut
- Vinegar, enough to cover
Method
- 1 Shred the cabbage finely and sprinkle with salt. Let it sit under moderate pressure for 12 hours to draw out moisture.
- 2 Drain the cabbage thoroughly through a colander. Slice the onions.
- 3 Layer the cabbage and onions in a large jar. Add cloves, mustard seed, pepper, and cut red pepper pods between layers.
- 4 Boil the vinegar and pour it over the mixture until everything is completely covered.
