Pickled Button Mushrooms With Ginger And Mace

Ingredients

  • 1 lb small button mushrooms
  • 1 quart water
  • 1 tsp salt
  • 1 cup white wine vinegar
  • 1 tsp mace
  • 1 tsp ginger

Method

  1. 1 Trim mushroom stalks. Wash mushrooms and rub them dry with a clean cloth.
  2. 2 Bring water and salt to a boil. Add mushrooms and boil briefly, then strain through a cloth.
  3. 3 Prepare a pickle by combining white wine vinegar, mace, and ginger. Heat until fragrant.
  4. 4 Place mushrooms in jars, pour the hot pickle over them, add a little oil, and seal tightly.
