Pheasant And Oyster Pie
Ingredients
- 1 pheasant
- Gravy made from pheasant cooking juices
- ½ cup milk
- Salt and pepper to taste
- Thickener (e.g., flour or cornstarch)
- Pie crust
- Raw oysters
Method
- 1 Boil the pheasant until almost cooked through, reserving the cooking liquid for gravy.
- 2 Prepare gravy using the reserved liquid, adding milk, seasoning, and thickener.
- 3 Line a hot pie dish with pie crust. Add pieces of pheasant and scatter raw oysters on top.
- 4 Pour enough gravy over the filling to reach one inch deep, then cover with the top crust, sealing the edges.
- 5 Bake for 30 minutes. Cut a slit in the top and pour in the remaining gravy before serving.
