Pear Mesclun Salad With Carrots And Walnuts
Ingredients
- 6 cups mesclun mix baby greens
- 2 canned pear halves, chopped
- 1 1/3 cups grated carrots
- 3 tablespoons walnuts
- 1/4 cup pear juice
- 1/4 teaspoon cider vinegar
- 1/4 teaspoon honey
- 1/4 teaspoon Dijon mustard
- 1 dash salt and black pepper
- 1/4 teaspoon extra virgin olive oil
- 1/2 tablespoon grated Parmesan cheese
Method
- 1 In a blender, combine pear juice, vinegar, honey, mustard, salt, pepper, and olive oil. Blend until smooth.
- 2 Place mesclun mix in a large bowl. Drizzle with dressing and toss to coat evenly.
- 3 Add chopped pears, walnuts, and grated carrots. Toss lightly to combine.
- 4 Divide salad among plates. Top each portion with grated Parmesan cheese.
