Peanut Meal Vegetable Hash

Ingredients

  • cold boiled potatoes
  • other vegetables on hand
  • butter
  • salt
  • peanut meal

Method

  1. 1 Chop fine cold boiled potatoes and any other vegetables on hand.
  2. 2 Place vegetables in a buttered frying pan and heat quickly and thoroughly.
  3. 3 Salt to taste.
  4. 4 Just before removing from heat, stir in a large spoonful of peanut meal for each person.
