Peanut Butter Honey Muffins

  • 3/4 cup peanut butter (chunky)
  • 1 tablespoon honey
  • 2 eggs
  • 1 1/2 cups skim milk
  • 1/2 cup flour
  • 3 tablespoons cornmeal
  • 2 teaspoons sugar
  • 1/2 teaspoon baking powder
  • salt

Method

  1. 1 Preheat oven to 375°F. Line 12 muffin cups with paper liners or grease bottoms.
  2. 2 Beat peanut butter and honey in a bowl until blended. Add eggs one at a time, beating well after each.
  3. 3 Mix in milk. Add flour, cornmeal, sugar, baking powder, and salt. Stir just until moistened.
  4. 4 Fill muffin cups 2/3 full. Bake for 20-25 minutes until golden brown.
  5. 5 Cool on a wire rack for at least 10 minutes before serving.
