Peanut Butter Honey Muffins
Ingredients
- 3/4 cup peanut butter (chunky)
- 1 tablespoon honey
- 2 eggs
- 1 1/2 cups skim milk
- 1/2 cup flour
- 3 tablespoons cornmeal
- 2 teaspoons sugar
- 1/2 teaspoon baking powder
- salt
Method
- 1 Preheat oven to 375°F. Line 12 muffin cups with paper liners or grease bottoms.
- 2 Beat peanut butter and honey in a bowl until blended. Add eggs one at a time, beating well after each.
- 3 Mix in milk. Add flour, cornmeal, sugar, baking powder, and salt. Stir just until moistened.
- 4 Fill muffin cups 2/3 full. Bake for 20-25 minutes until golden brown.
- 5 Cool on a wire rack for at least 10 minutes before serving.
