Peach Layer Cake With Meringue
Ingredients
- 1 egg yolk
- 1/2 cup sugar
- 3 tablespoons shortening
- 4 tablespoons water
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon vanilla
- 1 egg white
- 1/2 glass apple jelly
Method
- 1 Cream egg yolk and sugar. Mix in shortening, water, flour, baking powder, and vanilla until thoroughly combined.
- 2 Bake in a well-greased deep layer-cake pan in a moderate oven (350°F) for 20 minutes.
- 3 Cool the cake, then split it and fill with well-drained canned crushed peaches. Place the top layer on.
- 4 Beat the egg white and apple jelly with an egg-beater until the mixture forms a stiff meringue.
