Peach Layer Cake With Meringue

Ingredients

  • 1 egg yolk
  • 1/2 cup sugar
  • 3 tablespoons shortening
  • 4 tablespoons water
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon vanilla
  • 1 egg white
  • 1/2 glass apple jelly

Method

  1. 1 Cream egg yolk and sugar. Mix in shortening, water, flour, baking powder, and vanilla until thoroughly combined.
  2. 2 Bake in a well-greased deep layer-cake pan in a moderate oven (350°F) for 20 minutes.
  3. 3 Cool the cake, then split it and fill with well-drained canned crushed peaches. Place the top layer on.
  4. 4 Beat the egg white and apple jelly with an egg-beater until the mixture forms a stiff meringue.
