Peach Fritters
Ingredients
- 1/2 cup sugar
- 2 eggs, well beaten
- 1/3 cup butter
- 2 cups flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 tsp lemon juice
- 1/2 tsp vanilla
- 1 1/2 cups chopped peaches, fresh or canned
- whipped cream for serving
- powdered sugar for sprinkling
- hot fat for frying
Method
- 1 Cream the butter and sugar, then add the beaten eggs and beat thoroughly.
- 2 Sift the dry ingredients together and stir in the milk slowly.
- 3 Fold in the chopped peaches, lemon juice, and vanilla.
- 4 Drop by teaspoonfuls into hot fat and fry until golden brown.
- 5 Serve with whipped cream or sprinkle with powdered sugar.
