Peach Custard Pie With Meringue
Ingredients
- 1 cup peeled peaches, crushed
- 1/2 cup sugar
- 3/4 cup milk
- 2 tablespoons cornstarch
- 2 egg yolks
- 1/4 teaspoon cinnamon
- Pastry for pie crust
- Egg whites for meringue
Method
- 1 Place crushed peaches and sugar in a mixing bowl.
- 2 In a saucepan, stir milk and cornstarch to dissolve. Bring to a boil and cook for two minutes.
- 3 Slowly pour the hot milk mixture into the peaches while beating hard to blend.
- 4 Beat in egg yolks and cinnamon.
- 5 Pour into a pastry-lined pie plate.
- 6 Bake in a slow oven (300°F). Top with egg whites for meringue and bake until set.
