Peach Custard Pie With Meringue

Ingredients

  • 1 cup peeled peaches, crushed
  • 1/2 cup sugar
  • 3/4 cup milk
  • 2 tablespoons cornstarch
  • 2 egg yolks
  • 1/4 teaspoon cinnamon
  • Pastry for pie crust
  • Egg whites for meringue

Method

  1. 1 Place crushed peaches and sugar in a mixing bowl.
  2. 2 In a saucepan, stir milk and cornstarch to dissolve. Bring to a boil and cook for two minutes.
  3. 3 Slowly pour the hot milk mixture into the peaches while beating hard to blend.
  4. 4 Beat in egg yolks and cinnamon.
  5. 5 Pour into a pastry-lined pie plate.
  6. 6 Bake in a slow oven (300°F). Top with egg whites for meringue and bake until set.
