Peach Crumb Cake
Ingredients
- 3/4 cup sugar
- 1 egg
- 4 tablespoons shortening
- 2 cups flour
- 4 level tablespoons baking powder
- 3/4 cup water
- 6 tablespoons flour (for topping)
- 4 tablespoons sugar (for topping)
- 2 tablespoons shortening (for topping)
- 1 teaspoon cinnamon
Method
- 1 In a mixing bowl, combine 3/4 cup sugar, 1 egg, 4 tablespoons shortening, 2 cups flour, 4 level tablespoons baking powder, and 3/4 cup water. Beat just enough to mix.
- 2 Pour batter into a deep, well-greased and floured layer-cake pan. Cover the top thickly with diced peaches.
- 3 In a small bowl, rub together 6 tablespoons flour, 4 tablespoons sugar, 2 tablespoons shortening, and 1 teaspoon cinnamon until crumbly.
- 4 Spread the crumb mixture on top of the peaches. Bake in a moderate oven (350°F) for 30 minutes.
