Peach Crumb Cake

  • 3/4 cup sugar
  • 1 egg
  • 4 tablespoons shortening
  • 2 cups flour
  • 4 level tablespoons baking powder
  • 3/4 cup water
  • 6 tablespoons flour (for topping)
  • 4 tablespoons sugar (for topping)
  • 2 tablespoons shortening (for topping)
  • 1 teaspoon cinnamon

Method

  1. 1 In a mixing bowl, combine 3/4 cup sugar, 1 egg, 4 tablespoons shortening, 2 cups flour, 4 level tablespoons baking powder, and 3/4 cup water. Beat just enough to mix.
  2. 2 Pour batter into a deep, well-greased and floured layer-cake pan. Cover the top thickly with diced peaches.
  3. 3 In a small bowl, rub together 6 tablespoons flour, 4 tablespoons sugar, 2 tablespoons shortening, and 1 teaspoon cinnamon until crumbly.
  4. 4 Spread the crumb mixture on top of the peaches. Bake in a moderate oven (350°F) for 30 minutes.
