Peach And Cherry Sponge Cake Pudding
Ingredients
- stale sponge cake, sliced thin
- stewed peaches or cherries
- 2 egg whites
- 2 tbsp sugar
- cream, for serving
Method
- 1 Butter a baking dish and line it with thin slices of stale sponge cake.
- 2 Fill the dish nearly full with stewed peaches or cherries.
- 3 Cover the fruit with remaining cake slices.
- 4 Beat egg whites until stiff, then fold in sugar to make a meringue.
- 5 Spread the meringue over the top and bake until puffed and brown.
- 6 Serve cold with cream.
