Peach And Cherry Sponge Cake Pudding

Ingredients

  • stale sponge cake, sliced thin
  • stewed peaches or cherries
  • 2 egg whites
  • 2 tbsp sugar
  • cream, for serving

Method

  1. 1 Butter a baking dish and line it with thin slices of stale sponge cake.
  2. 2 Fill the dish nearly full with stewed peaches or cherries.
  3. 3 Cover the fruit with remaining cake slices.
  4. 4 Beat egg whites until stiff, then fold in sugar to make a meringue.
  5. 5 Spread the meringue over the top and bake until puffed and brown.
  6. 6 Serve cold with cream.
