Pea And Potato Soup With Fried Bread
Ingredients
- 1/2 lb dry green peas
- 1 tsp bicarbonate of soda
- 3 1/2 pints water
- 5 large potatoes
- 4-5 onions
- 5-6 leeks
- butter or beef fat
- 1 pig's trotter, cut into 4 pieces
- fried bread, diced
Method
- 1 Soak peas overnight in water with bicarbonate of soda. Drain and place in pot with 3 1/2 pints water.
- 2 Add potatoes and cook until peas and potatoes are tender enough to peel easily.
- 3 Rub the mixture through a sieve to create a smooth base.
- 4 Fry onions and leeks in butter or beef fat until brown. Add to the sieved peas along with the pig's trotter.
- 5 Boil for 30 minutes. Remove trotter pieces before serving.
- 6 Serve with diced fried bread on the side.
