Pea And Potato Soup With Fried Bread

Ingredients

  • 1/2 lb dry green peas
  • 1 tsp bicarbonate of soda
  • 3 1/2 pints water
  • 5 large potatoes
  • 4-5 onions
  • 5-6 leeks
  • butter or beef fat
  • 1 pig's trotter, cut into 4 pieces
  • fried bread, diced

Method

  1. 1 Soak peas overnight in water with bicarbonate of soda. Drain and place in pot with 3 1/2 pints water.
  2. 2 Add potatoes and cook until peas and potatoes are tender enough to peel easily.
  3. 3 Rub the mixture through a sieve to create a smooth base.
  4. 4 Fry onions and leeks in butter or beef fat until brown. Add to the sieved peas along with the pig's trotter.
  5. 5 Boil for 30 minutes. Remove trotter pieces before serving.
  6. 6 Serve with diced fried bread on the side.
