Pea And Garlic Mashed Potatoes

Ingredients

  • 4 medium potatoes (about 1 cup each)
  • 1 cup skim milk, divided
  • 1 clove garlic, peeled
  • 2 tablespoons frozen peas
  • 1/8 teaspoon soft tub margarine
  • 1/4 teaspoon white pepper (optional)
  • Kosher salt

Method

  1. 1 Simmer peeled, diced potatoes in water for 10 minutes until soft when pierced with a fork. Drain.
  2. 2 Cook frozen peas in microwave for 3 minutes; drain and reserve.
  3. 3 Heat 1/4 cup milk until hot. Add garlic cloves to milk and let stand for 5 minutes.
  4. 4 Puree peas, reserved milk, and garlic cloves using a blender.
  5. 5 Mash potatoes, slowly adding remaining 3/4 cup milk. Blend in pea puree, margarine, and white pepper.
  6. 6 Place in serving dish, keep warm, and sprinkle with Kosher salt just before serving.
