Pea And Garlic Mashed Potatoes
Ingredients
- 4 medium potatoes (about 1 cup each)
- 1 cup skim milk, divided
- 1 clove garlic, peeled
- 2 tablespoons frozen peas
- 1/8 teaspoon soft tub margarine
- 1/4 teaspoon white pepper (optional)
- Kosher salt
Method
- 1 Simmer peeled, diced potatoes in water for 10 minutes until soft when pierced with a fork. Drain.
- 2 Cook frozen peas in microwave for 3 minutes; drain and reserve.
- 3 Heat 1/4 cup milk until hot. Add garlic cloves to milk and let stand for 5 minutes.
- 4 Puree peas, reserved milk, and garlic cloves using a blender.
- 5 Mash potatoes, slowly adding remaining 3/4 cup milk. Blend in pea puree, margarine, and white pepper.
- 6 Place in serving dish, keep warm, and sprinkle with Kosher salt just before serving.
