Pea And Carrot Mousse On Toast

Ingredients

  • 10 or 12 button carrots
  • 1 pint fresh green peas
  • 1/2 cup white stock
  • 1 ounce butter
  • 1 ounce flour
  • 6 rounds of toasted bread
  • Salt and pepper to taste
  • Sprig of mint (optional)

Method

  1. 1 Scrape and slice carrots very thin.
  2. 2 Stew carrots in butter until quite tender.
  3. 3 Stir in flour, then add cooked peas.
  4. 4 Pour in stock and stir over fire for 10-15 minutes.
  5. 5 Butter toast rounds and spread mixture thickly on top.
  6. 6 Season with salt and pepper, garnish with mint if desired, and serve hot.
