Pea And Carrot Mousse On Toast
Ingredients
- 10 or 12 button carrots
- 1 pint fresh green peas
- 1/2 cup white stock
- 1 ounce butter
- 1 ounce flour
- 6 rounds of toasted bread
- Salt and pepper to taste
- Sprig of mint (optional)
Method
- 1 Scrape and slice carrots very thin.
- 2 Stew carrots in butter until quite tender.
- 3 Stir in flour, then add cooked peas.
- 4 Pour in stock and stir over fire for 10-15 minutes.
- 5 Butter toast rounds and spread mixture thickly on top.
- 6 Season with salt and pepper, garnish with mint if desired, and serve hot.
