Parsnip Fritters
Ingredients
- 2 large parsnips
- 1 tablespoon butter
- Salt and pepper to taste
- 1 egg, beaten
- Butter for frying
Method
- 1 Wash, scrape, and slice parsnips. Cover with boiling water and cook until tender.
- 2 Mash parsnips through a colander and return to the pan.
- 3 Add butter, salt, pepper, and beaten egg. Mix thoroughly.
- 4 Let mixture cool, then form into small flat cakes.
- 5 Fry cakes in butter until golden. Serve hot.
