Parsnip Fritters

Ingredients

  • 2 large parsnips
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1 egg, beaten
  • Butter for frying

Method

  1. 1 Wash, scrape, and slice parsnips. Cover with boiling water and cook until tender.
  2. 2 Mash parsnips through a colander and return to the pan.
  3. 3 Add butter, salt, pepper, and beaten egg. Mix thoroughly.
  4. 4 Let mixture cool, then form into small flat cakes.
  5. 5 Fry cakes in butter until golden. Serve hot.
